Sugar Free Apple Cake

Ingredients:

  • 4 cups sliced Sweet Grown Alabama apples
  • 1 cup swerve granulated
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 cups wheat flour
  • 2 tsps vanilla
  • 1/2 cup butter softened
  • 2 cups applesauce unsweetened
  • 3 eggs
  • 1/3 cup swerve brown sugar
  • 2 tsps cinnamon ground

Directions:

  1. Preheat oven to 350. Grease a 9×13 casserole or cake pan. In a medium bowl, mix sliced or chopped apples, cinnamon and brown sugar replacement, coating well.
  2. In a large bowl, mix eggs, applesauce, butter and vanilla. Mix well.
  3. In another bowl, mix whole wheat flour, salt, baking soda and granulated sugar substitute. Whisk or sift to combine. Slowly add dry ingredients to wet ingredients and combine. Do not overmix.
  4. Add half of the cake batter to the prepared pan. Top with half of the prepared apples and spread as evenly as possible. Add last half of cake batter and top with remainder of apples. Distributing both as evenly as possible.
  5. Bake 45 to 60 minutes. Checking often. Cake will be done when reaches internal temperature of 205 degrees Fahrenheit. Cool before serving.
