Squash Casserole

Ingredients:

  • 2 tablespoons of butter 
  • 5 Sweet Grown Alabama yellow squash cut into 1/4 inch slices
  • 1/4 cup chopped onion
  • 1 large egg 
  • 1 cup shredded sharp cheddar cheese
  • 8 ounces sour cream 
  • 1 teaspoon of Nature's Seasons seasoning blend
  • 1/2 sleeve of Ritz crackers 
  • 1/4 cup water
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large skillet, melt two tablespoons butter over medium heat and add sliced yellow squash, onions and Nature's Seasons seasoning blend.
  3. Cook until tender (add 1/4 cup of water to squash while cooking).
  4. In a large bowl, whisk together one large egg, cheese and sour cream. 
  5. Add cooked squash and onions to egg mixture and stir well.
  6. Spray a 9x9 casserole dish with cooking spray and pour squash casserole mixture into baking dish.
  7. Crush Ritz crackers and spread evenly over the top of the mixture.
  8. Bake in oven for 30 to 40 minutes or until top has lightly browned.
  9. Enjoy!
