Smoked Catfish Platter

 

Ingredients:

  • 3 Sweet Grown Alabama Farm-Raised Catfish fillets
  • 1 tablespoon olive oil
  • 1⁄2 teaspoon kosher salt
  • 1⁄2 teaspoon freshly ground black pepper
  • 1⁄4 teaspoon garlic powder

Instructions:

  1. Prepare the grill. Add some apple wood chips for smoking.

  2. Drizzle Catfish fillets with olive oil, and season with salt, pepper and garlic.

  3. Place fillets on a perforated pizza oven pan. Place pan directly on grill, and cover. Smoke for 25 minutes or until cooked through.

  4. Flake smoked Catfish on a platter, and surround with assorted vegetables, crackers and spreads

FOR THE PLATTER

Ingredients:

  • Sweet Grown Alabama cucumbers, sliced
  • Sweet Grown Alabama cherry tomatoes
  • Sweet Grown Alabama red onion, thinly sliced
  • Capers
  • Assorted crackers and sliced breads
  • Sweet Grown Alabama boiled egg, chopped
  • Cream cheese, whipped
