Bourbon Steak with Brussels and Sweet Potatoes

Ingredients:
- 1lb Sweet Grown Alabama steak
- 2 Large Sweet Grown Alabama sweet potatoes peeled and cut into bite size cubes
- 1 lb Sweet Grown Alabama Brussel sprouts trimmed and halved
- 1 tsp Smoked paprika
- 2 tbsp Whole grain mustard
- 1 tbsp Prepared horseradish
- 2 tbsp Bourbon
- 1 tbsp Garlic minced
- 2 tbsp Olive oil
- 1.5 tsp Salt
- 2 tbsp Brown sugar
- 1 tbsp Fresh rosemary minced
- 1.5 tsp Pepper
- 1/2 cup Red onion chopped
Directions:
- Preheat oven to 425 degrees F. In a large bowl, mix sweet potatoes, Brussels, onion, salt, pepper, rosemary, paprika and olive oil. Spread on a sheet pan in a single layer and bake for 20 minutes.
- While vegetables are baking. Pierce steak with a fork on both sides. In a medium bowl, mix bourbon, brown sugar, garlic, mustard and horseradish to combine. Pour over steak and massage in and set aside.

When vegetables are done, spread to each end of sheet pan and place steak in the middle. Bake another 20 minutes, turning the steak halfway through cooking time.

Allow meat to rest for 5-10 minutes, slice and serve. Enjoy!
