Lissa’s Cowboy Cookies

Ingredients:

  • 1 Cup Butter
  • 1 Cup Brown Sugar
  • 1¼ Cup White Sugar
  • 2 Eggs
  • 2 Cups Flour
  • 1 tsp. Baking Powder
  • 1/8 tsp. Salt
  • ½ tsp.  Baking Soda
  • 1 ½ Cup Granola Cereal
  • 1 ½ Cup Corn Flakes
  • 1 Cup Uncooked Quick Oats
  • 1 Cup Shredded Dry Coconut
  • 1 Cup Chopped Sweet Grown Alabama Pecans (Priester’s Pecans Small Pieces)
  • 1 tsp. Vanilla

Directions:

  1. Preheat oven to 350 degrees. 
  2. Cream Together butter and sugars – add eggs one at a time. 
  3. Sift flour, baking powder, salt and baking soda, and add to creamed mixture. 
  4. Add vanilla.
  5. Stir in cereal, oats, coconuts and pecans. 
  6. Drop by teaspoonfuls onto greased cookie sheet. 
  7. Cook for 10-12 minutes. 

Makes 140 small cookies.
